Double Chocolate Cookie Mint Ice Cream Sandwiches

I made these incredibly delicious, incredibly refreshing, and incredibly addictive cookie ice cream sandwiches on Friday, and I’m equal parts embarrassed and proud to tell you they have all been devoured already. Embarrassed because, really, when it comes to will power, this household has none. Proud because their quick disappearance serves as proof that these are wildly tasty, right?

Perfect warm-weather treat as far as I’m concerned—thick, fudgy chocolate cookies stuffed with cold, refreshing mint chocolate chip ice cream. Absolutely delicious. And though choosing a favorite cookie feels as disloyal and unfair as choosing a favorite child . . . this just might be my favorite cookie. Add ice cream to the mix and I can barely even form a coherent sentence.

Double Chocolate Cookie Mint Ice Cream Sandwiches
adapted from my Chewy Chocolate Cookies with White Chips

1 cup butter, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla
2 cups flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 + 2/3 cups semi-sweet chocolate chips
mint chocolate chip ice cream, softened just enough to scoop easily and smoosh between cookies

Preheat oven to 350 degrees. Cream together the butter and sugar, then add the eggs and vanilla and beat. In a separate bowl, whisk together the flour, cocoa, baking soda, and salt. Add to butter mixture and mix to combine. Stir in chips.

Scoop 1/4 cup balls of dough onto an ungreased cookie sheet and flatten them slightly with the palm of your hand. Bake for 10-12 minutes. Cool completely on baking sheet.

Place a generous scoop of slightly softened ice cream on one cookie and sandwich with another cookie. If desired, roll the edges in chocolate sprinkles or mini chocolate chips. Enjoy!

If you have leftovers, wrap them individually in plastic wrap and freeze.

The only downside, besides offering concrete proof of our lack of willpower, is that if you don’t eat them fast enough, they get messy quickly. Very messy indeed.

Okay, so here’s what happened. I really wanted Forrest to be in my pictures for this post. But he was really not feeling the ‘green ice cream.’ So we struck a deal: if he would just hold the cookie sandwich and smile, I’d give him a new hot wheels. All well and good right?

Right . . . until I thought it would be adorable for a picture if he had ice cream smeared on his face. Guess how much he appreciated that?

Thank goodness I had picked up some Wet-Nap recently (and used THIS coupon to save 55 cents on any Wet-Nap product at Walmart—bargain! Coupon valid while supplies last.) to handle the mess. Obviously cleaning up the drippy ice cream mess is the only con to indulging in these delicious treats, but it was quick and easy thanks to child labor and Wet-Nap, a winning combination.
