We’ve all heard of emotional eating—using food as comfort.

I know some of you will be with me here on this one: sure, I eat emotionally, but even more than that, I am an emotional baker.

Stressful day? Fed up with the kids? Too much on my to-do list? I bake. And yes, having a yummy treat to enjoy contributes to the enjoyment, but even the baking itself is soothing. It’s one little way to take a break from a chaotic day and create something happy and gooey and comforting and amazing.

The stress relief of emotional baking is real, my friends, and no one ever complains about the results, either.

Peanut Butter Swirl Snickers Brownies

Of course, if your emotional baking is a total flop, the devastation is huge. I have shed tears in the kitchen when my hunger-induced coping mechanism fails me.

Luckily, this recipe did not reduce me to tears. Unless we’re counting tears of joy? Because I could have shed some of those.

Peanut Butter Swirl Candy Brownies

When I’m hungry, I am grouchy and impatient and snappy and mean. So pass a brownie, and while you’re at it, swirl in a thick, gooey peanut butter layer, and toss some SNICKERS® on there, too. Go big or go home.

For these deliciously rich and satisfying brownies, I took the easy route by dressing up a plain box mix. I have to admit, as much as I prefer homemade everything, I am still a big fan of box mix brownies. I love how dense and fudgy they are.

Peanut Butter Swirl SNICKERS® Brownies

1 box brownie mix, prepared according to package directions
6 ounces cream cheese, softened
3/4 cup peanut butter
1/4 cup white sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
20 Snickers® Peanut Butter Square minis, coarsely chopped

Preheat oven to 350 degrees, and grease a 9x13” pan.

Prepare the brownie mix according to the directions on the box, and spread the batter in the prepared pan.

In a separate bowl, combine cream cheese and peanut butter, then mix in the sugar, egg, milk, and vanilla, and beat until smooth. Drop by large spoonfuls over the brownie batter, and use a knife to swirl the batters together for a marble effect. Top the brownie batter with the chopped SNICKERS® candies, and bake 35-40 minutes or until brownies are set.

Make sure not to mix the peanut butter and brownie batters completely! Just swirl/marble them.

Bake that goodness up, pour yourself a big glass of milk, and dig into the pinnacle of chocolate-peanut butter perfection. So rich and fudgy and delicious.

  2. Oh my goodness me. Rachel, these look so scrummy my mouth is watering at the thought of eating one... pity I'm following a weight loss plan so can't indulge right now, but as soon as I can allow a mega treat, I'm going to make some of these! Snickers, my all time favourite - thank you for the inspiration :-)
