Cheesy Corn Dog Muffins

My apologies if you’re experience blog déjà vu with this post . . . it went up last week for about an hour, then I had to take it back down because I guess I had the post date wrong. Sorry. Can we still be friends?

As if corn dogs alone aren't fantastic enough, here I go messing with them to try and make them even better. I've never made homemade corn dogs (I'm not really sure how this would be done, now that I think about it . . . would you need a deep fryer?), but I've been making the next best thing for a few years: corn dog muffins. Moist, tender, delicious corn muffins, studded with bites of juicy hot dog and melted cheddar cheese. A fun, easy, user-friendly (ie. no scalding hot oil necessary) alternative to the classic corn dog.

A few years back, this recipe was a favorite of mine and Jeff's, and I made it fairly often. But a few years have gone by, and of course I've lost the recipe. So I did my best to recreate it by making a few alterations to a basic corn muffin recipe, and tossed in some cheese as a little bonus ingredient. Extra cheese never hurt any recipe, as far as I'm concerned, and is always welcome in my kitchen. If you already have a favorite cornbread/corn muffin recipe, by all means, use it! Just fold in some chopped hot dogs and shredded Cheddar cheese before baking.

Cheesy Corn Dog Muffins

adapted from AllRecipes

1 cup cornmeal
1 cup flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1/3 cup oil
1 cup milk
4 hot dogs, chopped (I used Bar-S Franks)
1/2-3/4 cup shredded Cheddar cheese

Preheat oven to 400 degrees, and line a muffin tin with baking papers or grease. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together the egg, oil, and milk. Add milk mixture to dry ingredients, and stir just until moistened. Fold in chopped hot dogs and cheddar cheese (don't overmix!). Fill prepared muffin cups 2/3rds full, and bake in preheated oven for 15-22 minutes, or until the tops of the muffins are golden brown, and a toothpick inserted in the center of a muffin comes out clean.

If desired, serve with ketchup or fry sauce for dipping.

I made and served these muffins over the weekend for a simple summer dinner and game night with my sister and her husband. It was such an easy, tasty meal to pull together--we had these corn dog muffins, Bar-S Beef Franks (which I baked in the oven since we weren't smart enough to check in advance if we had propane for the grill--whoops), and some chips and watermelon.

One weird side effect of being raised by a blogger? Forrest has been so thoroughly trained by this point that I want--nay, demand--blog-worthy pictures of him, that he acts like a total doofus whenever I pull out the camera. Oh, you're posting about a hot dog dinner, Mom? Don't worry. I've got this. I effing LOVE hot dogs.

Sadly, Darcy does not share his enthusiasm for hamming it up for photos for me. And since she is suffering from a rather serious case of there are people in my house GET THEM THE HELL OUT OF HERE NOW, (scientists of the world: find a stranger danger cure, please, and pronto!), she was not nearly as willing to smile nicely for the camera. She was, however, perfectly willing to grumble and roar angrily at Bekah and Alan whenever they dared to glance in her direction. Such a friendly little peanut.

Luckily, Alan has the magic baby touch and somehow got her to warm up to him. I think that stunned-looking smile on her face is perfectly portraying her thoughts at the moment, which were along the lines of, WHOA, there's a person sitting next to me and I don't totally hate him. She's surprising herself by liking someone who isn't her blood relative. I was surprised, too.
